Remove Ubuntu installed on a separate Hard Disk from Windows (dual boot)

this is my first question, so please be gentle.

I have a dual boot system with:

  • a SSD with Windows and an EFI partition;
  • a HDD with separate data and a partition with Ubuntu (with another EFI partition).

I want to remove Ubuntu from the system (without losing all data in the HDD), but i have two EFI partition in different hard drive, as shown in the following image: image from Disk Menager

what is the second EFI partition for and how do I remove Ubuntu without losing all data?
